The harvesting is done by hand. The grapes are transported in small crates to avoid damaging the berries. When the grapes arrive at the winery, they are carefully checked on a sorting table to keep only whole and healthy fruits.

The vats of vinification in stainless steel have all of them a reliable and precise thermoregulation allowing to vinify each vineyard plot separately. According to the terroir, the age of the vines and the grape variety.

The fermentation begins with whole grapes and cold pre-fermentation maceration to preserve the aromatic potential of the grapes.

Maturation is done in french oak barrels during 16 to 18 months depending on the vintage.

All our wines are bottled at the Domaine Arguti.
